Taylor's Coconut Smoothie, April 2025 Version

I drink this coconut smoothie every morning and have since my three boy Chickens 🐣🐣🐣 declared that I needed to eat fruit again.  When we stopped being raw vegan in 2011 I was so sick of fruit (we were raw vegan for seven years) that I was not interested in eating it.  That was, ummmm... 14 years ago. 

I hadn't eaten fruit since then, so when my boys announced this to me on a Saturday night, I took it as three strong cooperative components giving me a message from my higher authentic self, and took ACTION the next morning, bright and early.  This smoothie is one of the results of that action.  😊😊  I LOVE it and I am also loving crisp Fuji apples (sliced always), cantaloupe and also, putting a TON of frozen blueberries in my Sunday morning gluten free pancakes - so many (like half the bag) that my pancakes are deep blue.  

A client asked for this recipe so I wrote it out, and she just suggested I blog about it because she loves it so much and has told all her friends.  😊😊  The cacao is also a great superfood.  ENJOY!

 

Taylor’s Coconut Smoothie

April 2025

 

Organic Coconut Chunks:  A full package (get it in the refrigerated part of the produce department next to the smoothies)

1 teaspoon raw cacao

1-2 tablespoons monk fruit granular (I like it sweet so I do 2)

1 tablespoon PB fit classic roasted peanut

Powder

1/4 teaspoon Chocho protein powder (this stuff is intense, hence, a teeny amount)

1/2 scoop collagen peptides

A quarter teaspoon sea salt

Filtered water and a little bit of ice

BLEND in a Vitamix or your favorite blender till smooth and creamy!  It's to LIVE FOR!
